This is probably my new favourite lunch recipe- I loved that I could use veggies I already had and easily add flavour with the sweet peppers. I didn’t have canned tomatoes but that didn’t matter- this is a tasty and forgiving breakfast or lunch dish, perfect for serving up with ease.

RECIPE NAME: Uova in Purgatorio with Crusty Bread

INGREDIENCE:
6 eggs, 1 can (28 oz) crushed tomatoes, 1 small onion (chopped), 2 garlic cloves (minced), 1 tsp red pepper flakes, 2 tbsp olive oil, salt, pepper, fresh basil, crusty bread for dipping.
INSTRUCTIONS:
Heat olive oil in a large skillet, sauté onion and garlic until soft (5 minutes). Add tomatoes and red pepper flakes, season with salt and pepper, simmer 10 minutes until thickened. Make 6 wells in the sauce, crack an egg into each, cover, and cook 4-6 minutes until whites set but yolks are runny. Garnish with basil, serve hot with bread for dipping.
